Local Concordian Shares Her Recipe for Stuffed Crust Cheese Pizza

Every spring my mom would make us pizza, and kids from school and the neighborhood would come over and enjoy. It saved other parents from figuring out what to do for dinner after a long week. 

Spring in Concord was always bright and fresh. The air outside smelled electric, and inside my house was baking bread and tomato sauce. 

Now, even though the neighborhood can’t partake in the Friday tradition, still it stands with the family gathering to make and eat pizza together. 



2 1⁄2 cups flour
1 teaspoon salt
1 teaspoon sugar
1 tablespoon fast rise yeast
1 cup water
1 tablespoon oil

In large bowl, combine flour, salt, sugar, and yeast. Mix water and oil; add to flour mixture. Turn onto floured surface; knead for 2 minutes.
Place in a greased bowl; turning to grease top. Cover and let rise for 20 minutes.
Punch down; place on 12in, greased pizza pan making sure to leave extra room over the sides to fold over. 

To stuff the crust, place small amounts of cheese around the edges and fold the remaining dough back over. Pinch the dough together so the cheese doesn't run out when baking. 


1⁄4 cup tomato sauce
1 teaspoon italian seasoning
1⁄2 teaspoon garlic powder
1⁄2 teaspoon salt
1⁄8 teaspoon pepper

Mix ingredients together and spread over crust. 

Add layer of shredded cheese of choice. Add toppings as desired.

Bake at 400* for 20 minutes or until light brown.
