Fresh & Easy Bruschetta

Elevate your summer dining with fresh, in season tomatoes from the Farmer's Market


¼ cup extra virgin

1-1/2 TBSP fresh minced garlic
7-8 Roma tomatoes, diced

¼ cup chopped, fresh basil

1 TBSP balsamic vinegar (or to taste)

1 tsp kosher salt

½ tsp ground black pepper

¼ grated or finely shredded Parmesan cheese

1 loaf French bread, sliced into ½” thick slices



Heat olive oil in a small saucepan over medium-low heat. Add garlic and saute until it starts to turn golden brown (do not brown it) – About 1-2 minutes. Pour into a large mixing bowl. Allow to cool.

Chop tomatoes, add to bowl once the oil has cooled. Add Parmesan, basil, balsamic vinegar, salt & pepper. Toss mixture well until blended.

Position rack a few inches below broiler and preheat oven on broil. Place bread slices on baking sheet and brush lightly with olive oil on both sides.  Broil about 1 minute then flip to toast the opposite side.
Spoon tomato mixture on to toasted, cooled French bread slices. Add more Parmesan to top, if desired. Enjoy!
